Jour fixe: Coffee meets Chemistry

In this week's Jour Fixe talk "Coffee meets Chemistry" Klaus Boldt presented his current research.

Klaus Boldt (Research Fellow / Dept. of Chemistry) presented "The Chemistry of Coffee".

Abstract:
Coffee is one of the most consumed beverages in the world, second only to tea. Both contain the stimulant caffeine as a core component. Its effect on the body is cherished by many, especially in the scientific community. The mathematician Paul Erdős even said that "A mathematician is a machine that converts coffee into theorems."
In this lecture I will talk about the chemical processes which are responsible for the taste and the effect of coffee, from the bean to the cup. As part of the talk I will show a short film in which I extract caffeine from coffee, to quantify the amount and to give an insight into the methods and tools of a chemist.
